What is Mákos Tészta

Everyone in Hungary loves Mákos Tészta, or ‘poppy seed noodles’. Because it is sweet; it’s smothered in butter; and it’s got poppy seeds in it. And of course Hungarians just love poppy seeds. Historically, Hungary has produced vast amounts of poppy seeds. They are a readily available and affordable ingredient for Hungarian cooks. Hungarian peasants almost certainly developed this dish in the rural countryside, where they transformed simple ingredients into hearty meals. However today Hungary now devotes some 15,000 hectares to poppy seed production

It’s hard to know whether mákos tészta is a main course or a dessert. But it is cheap and quick to make, and you dont need any particular cooking skills. Most people remember eating this dish at school where dinner ladies would serve it in school dinners to children of all ages, who try and put as much poppy seed and icing sugar on their pasta as they could get their hands on.

Some people mistakenly believe poppy seeds contain opiates, leading some parents to feed this to their hyperactive children in an attempt to calm them down. The thought of parents trying to get their children stoned to calm them down is an interesting one, but the reality is that the sugar would have quite the opposite effect.

These days, adults tend not to eat mákos tészta until they have children of their own. Only then do they have an excuse to take the tastebuds on a sweet trip down memory lane.

How to Make Mákos Tészta

Mákos tészta is a simple, comforting Hungarian dish that balances buttery pasta with the rich, nutty flavor of poppy seeds. Here’s how to make it:

  1. Cook the Pasta
    Boil 350 grams of tagliatelle in a large pot of salted water according to the package instructions. Once tender, drain the noodles, reserving about 100 ml of the pasta water.
  2. Prepare the Poppy Seed Butter Sauce
    In a large pan, melt 90 grams of unsalted butter over low heat. Add 2 tablespoons of lightly crushed poppy seeds and let them simmer for about a minute, releasing their aroma.
  3. Combine the Pasta and Sauce
    Toss the cooked pasta into the pan with the buttery poppy seed mixture, stirring to coat every strand. If the pasta looks a bit dry, stir in a splash of reserved pasta water until it reaches your preferred consistency.
  4. Sweeten and Serve
    Sprinkle 2 tablespoons of icing sugar evenly over the pasta, stirring to combine. Taste and adjust with extra sugar if you like a sweeter finish.

Mákos Tészta – Hungarian Poppy Seed Noodles

A sweet pasta covered in melted butter, poppy seeds and sugar.

Ingredients

  • 350 grams tagliatelle
  • 90 grams unsalted butter
  • 2 tbsp poppy seeds (lightly crushed in a mortar and pestle)
  • 2 tbsp icing sugar

Instructions 

  • Cook the noodles in a large pan of salted boiling water per the packet instructions. Drain and reserve 100 ml of the pasta water.
  • Melt the butter gently in a pan large enough to hold all the pasta. Add the lightly crushed poppy seeds and simmer for 1 minute, then add the pasta and stir well. Add a little pasta water if the pasta/ butter mixture is a little dry.
  • Sprinkle the icing sugar evenly over the pasta and stir well. Taste and add more sugar if you prefer it a little sweeter.
